Stuffed Peppers with Chocolate Chip Cookie Balls

Recipe is Found Here. I adopted the recipe with Boca Crumbles and added some of my own spices & flair. I love that you can adjust recipes on All Recipes based on how many servings you need to accommodate. 

Except my mom didn't use meatless crumbless. She used real deal holyfield meat.


Leftover peppers from yesterday's chicken sausages. I know. I am so resourceful. 

Not a real halfsie Italian today. 

Bast with more sauce every 15m. Just like lying on the beach. 

A moment on the lips... won't be on my hips. It's healthy!!

I know Finn is excited for some yummy goodness that is not pasta. "What?" You say. Yeah... lame-o. I still love him though. 


Let's talk about soreness. I am hating those stairs and bootcamp. It feels like the day after the marathon going on, on my inner thighs and ass. I am seriously? ugh. 


On a much more pleasant note. You MUST check out Pure Bliss Eats. I mean MUST. Or the world will self destruct Inspector Gadget style. I mean, fellow FitFluential Nicole, makes these chocolate chip cookie balls. Seriously? Party in my mouth. I have not tried them over ice cream or oatmeal like she suggests. I just pop them suckas in my mouth. In fact... they are almost gone. Oh and the pumpkin chocolate chip muffins. 15 seconds in the microwave along with coffee. #heaven

Have a great rest of your Sunday evening... I am off to pack my swim bag for another session after work tomorrow with my fellow runners! And making sure I get a 4 mile run in the morning.... run through the soreness!!

  1. I have a stuffed pepper recipe we use and I just love doing it! the cramming and jamming possibilities are endless! I love coming up with new combinations. We use spanish rice instead and its amazing!!!

    You need to try... I like them with boca meat, but regular ground beef, turkey or chicken works wonders! Have a great week. I will keep them coming!
