Today while perusing my google reader, I stumbled across Tri Marni's New Recipe for Baked Eggplant. Being 50% Italian, I love a great eggplant parm smothered in cheese and gravy (or sauce, depending on the region your forefathers are from). Eggplant so good it makes you want to smack your mama.
I instantly started to crave it.
Bad.
So after a quick shake out run with my run bud, Charlotte. I hopped in the car and picked up one eggplant plus some Morning Star meatless crumbles, because I had a $1 off coupon.
So pretty much I sliced one eggplant long ways one, slathered it with 1 egg/splash of skim milk then coated it with breadcrumbs. Baked at 425 for about 20 minutes until the crumbs were brownish. While they were cooking I cooked the "meat", heated the sauce (again with the fake sauce), and noodles.
I didn't finish all of it. So I scooped up the remaining noodles, added more sauce & "meat" plus two of the eggplant = lunch.
Let me tell you. Best dinner of 2012 thus far. Yep. Best dinner of the past 12 days.

Side note, did you hear. Hostess is filing bankruptcy. So please. Gather your Twinkies and hide them. You know they last forever. But apparently more Americans are eating yogurts and energy bars. Awesome!
I think I may have only eaten one Twinkie my whole life. Shall I eat one this weekend as a memorial service to them? Nah. Now if it were a Devil Dog (by Drake's)... I might just drive up to NY and bring a stash back home. Sadly, their shelf life is not that of a Twinkie.

ReplyDeleteI think I read that recipe b/c I recall craving baked eggplant last weekend!!!!! I did an awesome one I found on shape.com that was baked eggplant rolls stuffed /w ricotta YUM!
